Potcorn - Peanut Butter Marshmallow Bites


  • 1 pack Pop-up Potcorn microwave popcorn

  • 2 ¾ Tbs unsalted butter

  • ? tsp vanilla extract

  • 2 cups miniature marshmallows

  • 1 share size Peanut Butter M&Ms

  • 1 can non-stick cooking spray

Tip: Refrigerate the Peanut butter M&Ms prior to use. This will help prevent the M&Ms from cracking while forming the potcorn bites into shape.


  • Grease up a 9x9” baking dish with butter. Pop 1 bag of microwave Pop-up Potcorn. Empty bag in the greased 9x9” baking dish. Be sure to remove any unpopped kernels.

  • Melt butter in a small saucepan in low heat. Add vanilla extract and marshmallows. Use a non-stick spatula to mix ingredients evenly. Constantly stir until all marshmallows melt.

  • Pour and mix marshmallow mixture over the potcorn. Allow mixture to slightly cool.

  • Sprinkle a bag of M&Ms over the potcorn mixture. 

  • Spray non-stick cooking spray on your clean hands or disposable gloves and form bite size (about  1 ½” - 2”) balls with the potcorn mixture.  

  • Serve and enjoy!
